If you’re looking for a pancake with a difference this Shrove Tuesday (or just as an unusual side dish or wrap for tasty fillings) then give this recipe from Thistle Hotel Cardiff head chef Iain Inman.

To make your Laverbread Pancakes you will need:

  • 30g Laverbread (a type of puréed seaweed)
  • 1 medium eggs
  • 50ml milk
  • 100g plain flour

As with all pancakes, the preparation is very simple — just mix all the ingredients together until you get a runny consistency.

Cook small amounts of the mixture in a warm pan, flipping it to brown both sides.

Serve and enjoy!
